Who We Are

Kevan Mellendick,
PhD, RDN, CSSD, CSCS

Kevan as a Person:
I love eating and thinking about food. I love food so much I married a trained chef. Seriously, she graduated from the Culinary Institute of America, and we’ve spent over ten happily married years together. We have two adorable girls, who take up most of our non-food time with flower hunts, hikes, and delightful new games.

My primary passion outside family and food has become fitness, specifically strength training. My garage office/gym is now fully outfitted to support my work and fitness habit. This also helps me eat more food, a wonderful bonus.

I am a native of Baltimore, MD, but have lived all around the U.S. since childhood, including stints in KY, WV, TX, NC, GA, TN, and CA.

Kevan’s Education:
I attended the University of Maryland for a Bachelor of Science in Dietetics, followed by a combination Master of Science in Dietetics and Dietetic Internship at Sam Houston State University. I then went on to the University of North Carolina at Greensboro for PhD training, which is where Brian and I met and spent many hours together talking about nutrition.

Kevan’s Work History:
I have worked across a number of fields related to food and nutrition, from selling wine in college to clinical nutrition, teaching at the undergraduate level and healthcare management. My current position involves a mix of outpatient counseling, data science, and healthcare management.

I do my best to remain open to new frontiers in the field and any new opportunities that may arise along the way.

Brian Collins,

Brian as a Person:

I have always been an inquisitive person. At a young age I took apart my toys to see how they work and put them back together. That same fascination lead to careers in both food service and massage therapy and a desire to always keep learning.

I have a wonderful wife and two small girls to share my life with. By day my wife is an amazing mom by night she coaches gymnastics. We do our best to stay active and enjoy the chaos that two small children bring!

I am originally from Flagstaff, AZ, but have lived in Philadelphia, PA, Greensboro, NC, and currently Clover, SC (just south of Charlotte, NC). Outside of food and nutrition I love to be outdoors all year. It helps that it’s never really winter hear but summer can be challenging. I also enjoy woodworking and reading science fiction novels whenever I get some free time.

Brian’s Education:

I attended the University of North Carolina Greensboro for both by Bachelor of Science in Dietetics and my Master of Science in Dietetics. After graduation I became a Certified Dietary Manager through ANFP in order to work as a manager at Arbor Acres Retirement Community. More recently, I completed my Dietetic Internship at Meredith College.

Brian’s Work History:

Beginning at the age of 17 I have worked in various food service related positions. I have both served food and made food in many different venues, solidifying my love for food. My favorite job before moving into management roles was working catering events. In 2006, I began a career as a licensed massage therapist which led to me opening up my own practice in 2010. This gave me the flexibility to complete both of my degrees while also working as a teaching assistant and lab assistant within the nutrition department at UNCG.

After graduation, I spent two amazing years at Arbor Acres Retirement Community as a Dietary Manager. This increased my passion for food even more and lead to my current position as an instructor at Winthrop University in Rock Hill, South Carolina in the Department of Human Nutrition.
